Scrambled Eggs with Spinach and Feta, topped with Avocado slices.

Ingredients:

  • 2 large eggs
  • 1 cup fresh spinach
  • 1/4 cup crumbled feta cheese
  • 1/2 avocado, sliced
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions:

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the spinach and sauté until wilted, about 2-3 minutes.
  3. Beat the eggs in a bowl and pour them over the spinach. Stir gently to combine.
  4. Add the crumbled feta and stir until the eggs are set and the feta is slightly melted, about 2-4 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot with avocado slices on the side.
