Ingredients:
- 150g grilled chicken breast, diced
- 2 hard-boiled eggs, chopped
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped bacon, cooked
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 3 cups mixed salad greens
- For the dressing:
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions:
- In a large bowl, arrange the salad greens. Top with rows of chicken, eggs, blue cheese, bacon, avocado, and tomatoes.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad just before serving.
